For most people in Kenya,salad is a by the way and it can take a few months if not years before you include it in your daily menu.Salad are very nutritious depending on the type and if you could just be adding it t your menu even if its twice or thrice per week ,i bet you will never lack vitamins in your body.follow this simple recipe which readily available ingredients in your nearest market.                                   LETTUCE ,CUCUMBER VEG SALAD  ingredients                        2 heads iceberg lettuce,branched and washed well                        1 fresh cucumber ,washed and sliced                        1 small broccoli head,branched and par boiled                        1 fresh carrot,peeled and cut juliene                        1 avocado,peeled and cut into slices                        1/2 beetroot,grated                        1/4 cup lemon juice                        2 tbspn vinegar                        salt and pepper

EASY CROQUETTES RECIPE

Many chefs and other food sites have come up with different  croquettes recipes but i bet this recipe of mine beat them 10:0.You can use leftover potatoes and other few ingredients and i tell you its just so simple to make croquettes that you never look for its recipe again in the net.TRY THIS RECIPE                            Ingredients:                        4 leftover potatoes;peeled,washed and boiled till soft and tender                        250 g minced beef                        2 carrots,grated                        1&1/2 cup breadcrumbs                        1 tspn organic ginger                        1 tspn organic garlic                        1 tspn garam masala                        1 tspn ground basil                        1 cup all purpose flour                        3 eggs ,beaten                        salt and pepper                        Cooking oil                                         METHOD  1. NOODLES WITH CHICKEN & VEGETABLES STIR FRY

Noodles are adored by many ,including me because of their taste and fun in eating.They are rich in carbohydrates and are a good start for the day or even for lunch as they are a good source of energy.For even a better balanced dish ,i tried this recipe of noodles with chicken veg noodles and truly its a go for it recipe.                                     (serves 3) Ingredients:                       2 packets 120 g Indomie noodles, pre-boiled for 1 min                       250 g chicken breast,cut into bite-able size                       1 red onion,chopped                       A handful french beans,cut into halves                       1 yellow bell  pepper,sliced                       2 carrots,peeled and cut into wedges                       1 tspn ajino moto                       1/4 cup light soya sauce                        salt and pepper to taste                       3 tbsp cooking oil.

As long as you've ever gone to a wedding,i bet you've tasted that pilaf  rice in buffet that makes you wonder who and how the rice was cooked.Commonly known as pilau in Kenya,the dish origin is from the coastal region of Kenya. Some say its the Arabs who invented the dish during the missionary times.
