EASY SALAD THAT'S SIMPLE TO MAKE YET NUTRITIOUS
For most people in Kenya,salad is a by the way and it can take a few months if not years before you include it in your daily menu.Salad are very nutritious depending on the type and if you could just be adding it t your menu even if its twice or thrice per week ,i bet you will never lack vitamins in your body.follow this simple recipe which readily available ingredients in your nearest market.
LETTUCE ,CUCUMBER VEG SALAD
ingredients
2 heads iceberg lettuce,branched and washed well
1 fresh cucumber ,washed and sliced
1 small broccoli head,branched and par boiled
1 fresh carrot,peeled and cut juliene
1 avocado,peeled and cut into slices
1/2 beetroot,grated
1/4 cup lemon juice
2 tbspn vinegar
salt and pepper
METHOD
First is to cut the lettuce into bite able sizes.You can use hands to make it fast.Place in a large bowl.
Add all other ingredients to the bowl and mix thoroughly using kitchen tongs.Season with salt and pepper .
Refrigerate for 30 mins then serve chilled.
