HOW TO COOK THE TASTIEST YET EASY USWAHILI PILAF

As long as you've ever gone to a wedding,i bet you've tasted that pilaf  rice in buffet that makes you wonder who and how the rice was cooked.Commonly known as pilau in Kenya,the dish origin is from the coastal region of Kenya. Some say its the Arabs who invented the dish during the missionary times.
I wanna share with you a recipe thats simple to prepare,delicious, and yet the ingredients are readily available at local shops and supermarkets.SEE THE RECIPE BELOW

                                      PILAF RICE RECIPE

                              (serves 5)
     ingredients:
                       3 cups white rice,washed thoroughly and drained.
                       1 bunch broccoli,washed and branched
                       500 g beef,cubed
                       2 white onions,chopped
                       1 garlic clove, crushed
                       1 fresh ginger root, grated
                       1 bunch coriander,washed and chopped
                        2 tbspn pilaf masala
                        1 whole cinnamon stick,cut into inch pieces
                        1 tspn cumin seeds,crushed
                        1  cup beef stock
                        1/8 cup dark soya sauce
                        4 cups water
                           salt and pepper to taste
                        4  tbsp olive oil
                         2 red onion rings and a coriander sprig for garnish.

                                        METHOD

   1.   In a medium sized saucepan,heat 4 tbspn olive oil on medium high heat.Add the onions and start stirring.Cook till all onions are translucent in colour then add the garlic & ginger.Cook till their aroma is smelt in the room.
   2.    Add the beef,cinnamon stick and soya sauce.Cook the beef till tender and almost cooked.
   3.   Add the broccoli,coriander,pilaf masala,cumin seeds and cook till the broccoliu are tender.Add alittle water to avoid food sticking on the saucepan .
   4.   Add the drained rice and continue to stir so as all the rice is all mixed with other ingredients.Stir for another minute until rice grains seems hardened.
   5.   Add the beef stock,water then season with salt and pepper to taste.
   6.  Cook for 15 mins then reduce heat to medium -low.
   7.  When water is almost reduced ,turn off heat and simmer for 10 min.This ensures the pilaf turns to be fluffy.Fluff with a fork also to make it fluffy.
      Chill for a few minutes then serve and garnish  with the onion and coriander sprig.Enjoy.
