FOR THOSE WHO LOVE SEAFOOD THIS GRILLED SALMON FILLET WILL MAKE YOU LOVE IT EVEN MORE

Salmon is considered expensive but according to me ,the price matches its quality.I imagined about a grilled salmon and came up with the following recipe.Hope you will enjoy.

                  GRILLED SALMON SERVED WITH SWEET CHILI SAUCE


                                     (serves 2)

ingredients
                    for the sauce:
                                           3 red chillis
                                           2 green chillis
                                            2 cloves garlic
                                           1 tbspn sesame oil
                                           2 tbspn caster sugar
                                           2 sprigs corriander,chopped
                                           2 tbspn,lime juice
                                           1 tspn lime zest
                                             mortar and pestle
                      for the salmon
                                             2 salmon fillets
                                              salt and pepper

                                              METHOD

  we'll start with making the sweet chili sauce.

1.  Start by deseeding the chilis and chopping them finely.
Crush the garlic and chop finely also.
 2. In the motar,place the chilis,garlic,coriander and lime zest and crush to form a smooth paste.
 3. Add the caster sugar,sesame oil,and the lime juice and continue stirring in the motar.
 4. Taste to make sure the sauce is well done.it should taste sweet and at the same time has the tangy chili feeling.cover with cling film and preserve in the fridge as you prepare the salmon.

preheat the grill to about 120c

 5. season the fillets with salt and pepper on both sides.
 6. place in the grill and start by grilling skin side down.grill 4 mins in each side or until the salmon is cooked to your liking.
 7. take out of grill and rest it on a kitchen towel.
 : To plate ,place the salmon at the centre of the plate and top with the sweet chilli sauce you had prepared.
 : Serve with your best wine.Enjoy.
