FOR THOSE WHO LOVE HOT THINGS,TRY THIS HOT CHILI CHICKEN WINGS CURRY
Ingredients;
8 fresh chicken wings
4 red chilis
2 red bell pepper,chopped
1 garlic clove,crushed
1 fresh root ginger ,grated
1 cup candamia nuts,desheled
1 cup coconut milk
1 tbspn chili powder
1 tspn tumeric
1&1/2 tbspn curry powder
2 while onions,chopped
3 fresh tomatoes,sliced
1 bunch corriander,chopped
few sprigs coriander chopped for garnish
salt and pepper
cooking oil
METHOD
1. First deep fry the chicken and let it cool up on a kitchen towel.
2. In a blender,blend the chilis,bell pepper,garlic and ginger till a smooth paste is formed.Transfer into a bowl.
3. In a large pan,add 3 tbspn of oil and fry the onions on medium heat till translucent and not browned.Add the tomatoes and cook for another 1 min.
4. Add the candamia nuts, coriander ,chili powder,tumeric and the curry powder.cook for 1 min while stirring thoroughly then add the paste you had made earlier together with the fried chicken.cook for another minute or until the paste starts to bubble then add the coconut milk.season with salt and pepper.
5. Reduce heat and simmer for ten minutes.take out from heat, garnish & serve with your favourite accompaniment,be it chapati or rice.
