HERB CRUSTED RED MALLET SERVED WITH GRILLED PEARS

It was on early this year when i came up with this recipe during the pears season here in kenya.I marinated the pears in sugar added red wine for a few hours and the flavour that they give after grilling is tremendous sweet.What could go better with this grilled pears except the famous herb crusted red mallet fillet.See my recipe below. (serves 2) Ingredients                           for the HERB CRUSTED MALLET you need;                           -   2 100g red mallet filllets                           -   1 cup branched broccoli                           -   1/4 cup bread crumbs                           -   1/4 cup toasted sesame seeds                           -   A handful mint leaves                           -   1 tbspn ground basil                           -   1 tbspn lemon zest                           -   2 eggs,beaten.                           -    salt and pepper                           -    olive oil                         FOR THE GRILLED PEAR

STIR FRY BEEF AND BROCCOLI WITH PEPPER PICKLES

A simple to make stir fry dish that is gonna warm you up. Ingredients                          - 500g  beef,cubed                          - 2 heads broccoli,washed and branched.                          - 4 bullet chilis,sliced                          - 1 tbspn chopped garlic                          -   2 fresh carrots,washed and cut into wedges                          -  3 tbspn soy sauce                          -  1 tbspn cornflour dissolved in  a 1\4 cup warm water                          -   salt and pepper                          - cooking oil                                    METHOD  1. In a wok,heat 3 tbspn olive oil on medium heat.Add garlic and brown for 30 seconds till its aroma        can be smelt.  2. Add beef and stir fry for 2 mins .It should be almost cooked before adding the vegies.  3. Omena is a finger sized type of fish and is a delicacy loved by many especially the western sides of kenya and environs.Though other people say omena is a bitter dish and dislike it,i guess its because they don't cook it the right way.Try this simple recipe of mine and you'll come to appreciate any dish accompanied by this small type of fish.  serves 3 Ingredients                         -   1 kg fresh omena                         -   4 fresh tomatoes,sliced                         -   1 white onion,finely chopped                         -   1 bunch fresh coriander                         -   1 tbspn royco mchuzi mix                         -    cooking oil                         -     salt and pepper to taste                                   METHOD 1. Place omena in a large bowl and pour in a jug of warm water for cleaning.Clean them thoroughly       using your hands then drain the water.Pour in another jug of cold water and continue cleaning.

EMBRACE KENYAN MEALS BY TRYING THIS MOUTH WATERING MUKIMO AND BEEF STEW

Mukimo is a traditional kenyan delicacy made with mashed potatoes,soft maize and specific greens.The dish is liked by many as it is served in weddings,family gatherings and other big occasions.My grandma shared this recipe to me and i  thought i also should share it to you to.Its simple,delicious and healthy.                        Mukimo recipe Ingredients                   -  2 kg potatoes,peeled and washed                   - 1 kg soft maize ,boiled                   -1 bunch pumkin leaves,boiled and blended                   - 3 tbspn ground stinging nettle                   -salt to taste                                                Method  1.
