BEST PAN FRIED OMENA EVER.
Omena is a finger sized type of fish and is a delicacy loved by many especially the western sides of kenya and environs.Though other people say omena is a bitter dish and dislike it,i guess its because they don't cook it the right way.Try this simple recipe of mine and you'll come to appreciate any dish accompanied by this small type of fish.

Ingredients
- 1 kg fresh omena
- 4 fresh tomatoes,sliced
- 1 white onion,finely chopped
- 1 bunch fresh coriander
- 1 tbspn royco mchuzi mix
- cooking oil
- salt and pepper to taste
METHOD
1. Place omena in a large bowl and pour in a jug of warm water for cleaning.Clean them thoroughly using your hands then drain the water.Pour in another jug of cold water and continue cleaning. Drain and repeat cleaning till the water drained is clear.Rest in a sieve bowl for a few minutes to dry and drain properly.
2. In a wok,heat 4 tbspn oil on medium high heat then add the omena.Fry for 3 mins while stirring till omena turns to be crispy .
3. Add the onions and tomatoes and continue stirring.Lower the heat and simmer for 2 mins.The tomatoes will have produced their own juice so the dish wont be too dry.
4. Dissolve the mchuzi mix in a 1\4 cup water and add to the dish.Stir all through then add the coriander and finally season with salt and pepper.Simmer for a minute and take out of heat.
= The dish is ready for serving and its just that simple yet delicious.Serve with ugali and greens.
