HERB CRUSTED RED MALLET SERVED WITH GRILLED PEARS

It was on early this year when i came up with this recipe during the pears season here in kenya.I marinated the pears in sugar added red wine for a few hours and the flavour that they give after grilling is tremendous sweet.What could go better with this grilled pears except the famous herb crusted red mallet fillet.See my recipe below.



(serves 2)

Ingredients
                          for the HERB CRUSTED MALLET you need;
                          -   2 100g red mallet filllets
                          -   1 cup branched broccoli
                          -   1/4 cup bread crumbs
                          -   1/4 cup toasted sesame seeds
                          -   A handful mint leaves
                          -   1 tbspn ground basil
                          -   1 tbspn lemon zest
                          -   2 eggs,beaten.
                          -    salt and pepper
                          -    olive oil

                        FOR THE GRILLED PEARS
                       -  2 asian pears,washed ,cored and cut into circular slices
                       -  2 glasses dry red wine
                       -  2 tbsn brown sugar.
                       -   1 cinnamon stick.


                                   METHOD
 1. We start by marinating the pears.In a bowl ,pour in the dry red wine and stir in sugar.Put the                 cinnamon stick in the solution then arrange the pear slices till all coated with the wine.Refrigerate       to marinate as you go on preparing the fillets.
 2. Preheat oven at 140c
 3. First season the fillets with salt and pepper.Heat 2 tbspn olive oil on medium heats and pan sear           the fillets for a 30 seconds  starting with skin side down.Remove from heat to cool.
 4. Meanwhile lets make our herb crust.In a food processor,add in the broccoli,breadcrumbs,sesame         seeds,mint leaves,basil,lemon zest and a dash of olive oil.Give this a blend till a green crumb is           formed.It will look like green bread crumbs but when you pinch it should stick to you                           fingers.Take out and place in a shallow tray.In another shallow tray place the eggs.
 5. Take the fillets,egg wash and finally coat with the herb crumbs shaking of any excess.
 6. Bake this at 140c for 15 mins.
 7. Lets get back to our marinated pears.Take the slices out of the wine shaking of any excess and             grill for 4 mins.2 mins on each side.Retain the redwine sauce.
 8. When the fillets are done,cool for a few mins and its time to serve.
 9.  Place the fillets at the centre of each plate.Side with 3 slices pears and then give an over dash              with   the retained red wine sauce.Enjoy.
